Yes you read the title right, Chocolate…Pumpkin….Pancakes. It almosts sounds as good as it tastes! These are a yummy and fun way to celebrate the wondrous season that is fall. I LOVE anything pumpkin and BONUS it’s really good for you too! They are loaded with anti-oxidants, beta cerotene, zinc, and fiber! (So it makes me feel better about the chocolate, syrup and butter) Find out more about the health benefits of pumpkin here.
Here’s what you need for these delicious pancakes…
Okay I know, you’re thinking…for a do-it-yourselfer, why am I using pancake mix? Why you say? ITS SO EASY. There I said it. I always keep a big ol’ bag of this stuff on hand for times like these when I just don’t feel like making them from scratch. And you know what? They’re just as good.
I like Krusteaz because all it calls for is water, but you can also use Bisquick.
2 Cups of pancake mix (or you can make it yourself…show off)
2 Tbs. brown sugar
2 tsp. ground allspice. I didn’t have any ground, I just had some whole allspice (go figure?). So…I ground it myself…see directions below…
1 1/2 cup evaporated milk –this is also a great thing to have on hand
1 1/2 cup pumpkin puree
2 Tbs. vegetable oil
2 eggs
1 tsp. vanilla
Okay! Let’s get to it…
In your most favorite large mixing bowl, combine pancake mix,
Brown sugar,
Cinnamon, and allspice. If you’re like me, and only had whole allspice on hand, here’s how to grind it (using common kitchen tools):
Place desired amount of whole allspice into a large ziplock bag (I used a gallon size freezer bag because they are the strongest)
Using a meat tenderizer (or a hammer), pound whole allspice until pieces are very small. This takes a good amount of pounding. Tilt your tenderizer (or hammer) at an angle to break up large pieces. This is a little tedious, but it’s worth it as the allspice adds just that extra bit of “fall” taste to the pancakes. I bet the next time you go to the store, you’ll buy ground allspice, I did.
Your ground allspice should be about this consistency:
Lovely. Let’s move on.
Mix all your dry ingredients together
In a separate bowl, combine the wet ingredients…
This is a great little trick..use the pointed side of a bottle opener to pierce two triangle shaped holes in your can. This allows the liquid to flow easier out of the can!
Next add your eggs…
Vegetable oil…
Then the vanilla…
Mix these ingredients together before adding the pumpkin
Mix all wet ingredients well
Add wet ingredients to dry
Mix all ingredients together
Now at this point, you can either add in the chocolate chips, or if you want some without chocolate (also good), then add in the chips when they’re on the griddle. Prepare your griddle (or pan, griddle’s are great though) by spraying with a non-stick spray. You can use butter too if you really want to go all out.
Pour batter onto griddle
If you didn’t add in the chocolate already, go ahead and add it now.
My mom likes to get a little crazy and “throw” the chocolate chips on…for this post I made her gently place them in.
When your pancakes get large and plump, go ahead and flip them over and let them cook a little longer on the other side.
Remove from griddle and serve hot with butter and syrup (and milk of course). Mmmmmmmmmmmmm
